After coming in here, I was overwhelmed by the options - as everything looked amazing behind the glass. I ended up going with the twice baked almond butter croissant as it had the longest name The one negative I have about this place is that there's nowhere to sit & eat. Going into it, my plan was to get the pastry, find a spot, finish it, and go grocery shopping. However, once I picked it up, I realized there wasn't anywhere to sit inside. This wouldn't be a problem if it was the summer - there are a few benches outside - but as this was December my only option was to try and do grocery shopping while eating the croissant, which proved difficult enough that I just stowed it away until I got home, and reheated it in the air fryer What I actually had of this, though, was incredibly good. First of all the pastry is huge - it's well beyond the normal size of a croissant. Don't get fooled by the croissant name either - as this is bulky, thick, and deep. One bite sends your teeth cascading through layers and layers of flakes, almonds, and cream, and then you realize you've still got 95% of the croissant left. There are a ton of almonds on top, and the powdered sugar is excellent. The whole thing is just so incredibly dense you feel very full after eating it. The layer of hardened syrup on top also provides an excellent new layer of sugary flavor It was a lot better when it was hard & crunchy in the few bites I had before re-heating, when it turned soft, but I still very much enjoyed this. At only like 6 bucks, it's like a cheap version of a full meal Overall, I'm very excited to try other things from this place (when it's actually warm outside). 8.75/10

I visited Bakery Nouveau in Seattle early one morning, and wow, it was already buzzing with people grabbing their pastries! The energy was infectious, and I could see why it’s so popular. I ordered the Twice Baked Almond Croissant and the Twice Baked Chocolate Croissant, and they were absolutely divine—flaky, rich, and bursting with flavor. These croissants are hands-down some of the best I’ve ever had! Bakery Nouveau is a must-visit spot in Seattle. I wish I’d had time to try more of their pastries, but I’m already looking forward to my next trip back to dive into their menu again. Don’t miss this gem!

I visited in the afternoon, so there weren’t many bread options left. The place was packed, and it had a well-balanced selection of both savory and sweet pastries. I got an almond croissant and a berry-filled donut. The berry cream and bread had just the right level of sweetness, and the almond croissant was incredibly soft and delicious. I was a bit worried it might be too buttery, but it wasn’t overly greasy, which I really liked. It was clear why so many people visit this bakery. They had a great variety of desserts and cakes, so I’m planning to try those next time. The staff was very friendly, and they even offered samples. The shop was clean, efficient, and despite being crowded, it was well-organized. I’d definitely visit again.

The croissants here are consistently incredible. I usually come for the sweet pastries, but my recent obsession has been their savory sandwiches!

It was hard to choose just a few items from all of the gorgeous sandwiches, pastries, and more being offered. The brunch pizza is an excellent value. The cinnamon roll seemed to use a unique type of cinnamon and the donut we had was light and sweet. The croissants were just right. Wish there was a spot to sit and enjoy in the cafe, but on a nice day I suppose the park outside would work. We will be back for more!

This place will always be my favorite. The twice-baked almond croissant—wow, so good. I’ve moved from Seattle, but I visit every month, and whenever I’m here, I have to stop by and grab some. I even take a few with me back to Dubai.

One of my favorite bakeries in Seattle. This location can get a bit crowded at times, but the line usually moves quickly and the staff is friendly. I love their carrot cake, cookies, and breads…. But but honestly, pretty much all their pastries are amazing. I did try their pizza once and it wasn’t my favorite, but everything else keeps me coming back. Definitely worth a visit if you’re in the area!

Bakery Nouveau is one of my favorite spots on Capitol Hill. The pastries are always top-notch—everything looks amazing, but the pound cake is my absolute favorite. It’s consistently busy, but the line moves fast and is well worth the wait. The sandwiches always catch my eye too… I haven’t tried them yet, but one day I will! A fantastic bakery all around.

Walked into Bakery Nouveau in Capitol Hill and immediately got distracted by the STUNNING sandwich display. The kind of case that makes you press your face a little closer to the glass like a kid at an aquarium. Ordered a dirty chai and an egg salad croissant. Let's talk about that croissant. Super crisp on the outside, soft and buttery inside, with egg salad that was creamy but not too heavy. It was DELICIOUS YALL! Service was quick, the space was bright and inviting, and the whole experience started my day perfectly! Capitol Hill is lucky to have Bakery Nouveau!
